Stuffed Eggs: 14 Quick and Delicious Recipes

Stuffed eggs are a quick and appetizing snack. It takes no more than 20 minutes to prepare, and thanks to the huge variety of fillings, you can turn a classic dish into a true culinary masterpiece.

Classic Recipe

The simplest option for stuffed eggs requires just three components: eggs, mayonnaise, and salt. Boil the eggs for 10 minutes after the water starts to boil, then place them in ice water and let them cool completely. Carefully peel them to avoid damaging the egg white, remove the yolk, and mash it with a fork, adding mayonnaise. You can season the mixture with minced garlic. Then place the mixture back into the egg white. Done!

To make the snack more filling and savory, you can add grated cheese to the egg-mayonnaise mixture.

Recipes with Various Fillings

With Red Fish

Any red fish will work for this recipe: trout, salmon, or pink salmon. Cut the lightly salted or smoked fish into small cubes, remove the yolks from the boiled eggs, mash them with a fork, mix with mayonnaise, and add the fish pieces.

To surprise your guests, you can try this variation. You will need 150 grams of smoked red fish, the same amount of cream cheese, 100 grams of green peas, half a lemon, and 10-15 grams each of horseradish and Dijon mustard. In a blender, mix the fish, cheese, mustard, horseradish, yolk, lemon zest, and peas. You can garnish this variation of eggs with finely chopped dill.

With Imitation Crab Sticks

In this version, melted cheese is used instead of mayonnaise. Crush the yolks, add a couple of tablespoons of cheese, finely chopped dill, and grated imitation crab sticks. Season the mixture with salt and pepper, and fill the egg whites with it.

With Mushrooms

Choose dried mushrooms as they are much more aromatic. For 8-10 eggs, you will need 100 grams of dried mushrooms, 1 onion, 50-80 grams of butter, mayonnaise, and salt and pepper to taste.

Wash the mushrooms, soak them in water for a while, then boil for 10-15 minutes. Finely chop the onion, sauté it together with the boiled mushrooms for about 10 minutes. Next, for the filling, mix the yolks from the boiled eggs with the onion-mushroom mixture and mayonnaise.

With Avocado

This is a real treat for those who follow a healthy diet: delicious, filling, and nutritious. Drizzle the avocado flesh with lemon juice, season with salt and pepper, and blend with the yolks. Fill the egg whites and garnish with a slice of tomato.

With Tuna

Mash the yolk of the boiled eggs with a fork or grate it finely. Drain the liquid from a can of tuna, place the fish in a bowl with the yolks, add finely chopped fresh cucumber and red onion, and 2 tablespoons of cream cheese. Season with salt and pepper. Fill the egg whites with the mixture.

With Cod Liver

Tender cod liver is an excellent filling for a hearty snack, and these stuffed eggs can be prepared in a couple of minutes.

Combine the cod liver with the yolks, add 2 tablespoons of melted cheese and a couple of cloves of garlic. You can garnish the eggs stuffed with cod with any herbs.

With Ricotta and Pesto

This delicate, exquisite mixture will turn a classic snack into a dish worthy of the best restaurants.

To prepare this filling, you will need 3-4 tablespoons of ricotta, pesto sauce to taste, lemon juice, and salt and pepper to taste. Mix these ingredients with the yolks, and you can also add 1 teaspoon of olive oil.

With Carrots

Grated fresh carrots will make the filling juicy, and melted cheese will make it tender. Combine grated carrots with cheese, yolks, and garlic, and fill the egg whites.

With Herring

Place the yolks, herring fillet, and onion in a blender and blend until smooth. Add a little sour cream, mustard, season with salt, and fill the egg whites with the mixture.

With Vegetables

To make the snack look festive and colorful, you can use vegetables of different shades. For example, beets. Mix 1 herring, 1 beet, mayonnaise, lemon juice, and sunflower oil. Sauté finely chopped onion and add it to the mixture. Put this in a blender. You can also add pollock roe to it.

With Caviar

A traditional, appetizing, and exquisite snack. It is very easy to prepare and looks truly impressive.

Mix the yolks with a tablespoon of cream cheese and chopped parsley. Fill the egg whites and top with red caviar.

With Nuts

An unusual combination that will surely seem appetizing and exquisite to your guests. In Caucasian cuisine, this snack has a sonorous name — akutagichapa.

Crush walnuts, season with salt, add finely chopped cilantro and parsley, yolks, and a spoonful of spicy adjika. If the mixture turns out too dry, add a little sour cream to it.

With Ham

Grate slightly frozen ham on a coarse grater, combine it with finely chopped cucumbers, green onions, add yolks, a spoonful of Dijon mustard, and mayonnaise. Mix well and fill the egg whites.

Serving and Decorating Stuffed Eggs

The snack looks great on a festive table if served on a platter with lettuce leaves. They will accentuate the eggs. Depending on the filling, you can sprinkle them with pomegranate seeds on top: this option is perfect for hearty dishes, as the acidity will complement the beets, cheese, and cod liver.

You can insert a slice of tomato, a small salted cracker, or a cucumber slice into each half of the egg.

To make the filling look neater, you can use a pastry syringe instead of a spoon — it will create nice waves.
