This vartuta impresses with its flavor and tender texture: the elastic water-based dough, aromatic apple filling, and pumpkin create a great mood. The pastry is suitable for both warm and completely cooled states.
Ingredients
For the dough:
- Warm water — 150 ml
- Vegetable oil — 150 ml
- Sugar — 1 tbsp.
- Salt — 0.5 tsp.
- Flour — 450 g
For the apple filling:
- Apples — 1.2 kg
- Cornstarch — 1.5 tbsp.
- Sugar — 2–3 tbsp.
- Lemon juice — 2 tsp.
- Cinnamon — 1 tsp.
- Roasted nuts — 50 g
For the pumpkin filling:
- Pumpkin — 350 g
- Sugar — 2 tbsp.
For brushing:
- Egg yolk — 1 pc.
- Milk — 1 tbsp.
Preparation
- Mix warm water, oil, salt, and sugar, gradually add flour, and knead a soft elastic dough. Cover and let it rest for 15 minutes.
- Prepare the apple filling: grate or finely chop the apples, mix with sugar, cornstarch, lemon juice, cinnamon, and nuts. For the pumpkin filling, grate the pumpkin and mix with sugar.
- Divide the dough into 4 parts, roll each thinly and stretch by hand into a large thin sheet.
- Place the fillings in strips or an even layer, roll into logs, and shape into vartutas.
- Transfer to a baking sheet lined with parchment. Mix the yolk with milk and brush the tops of the pastries. Bake at 180 °C for 40–50 minutes until golden brown.
- Allow the vartutas to cool slightly and serve warm or completely cooled.
