Zucchini and Cheese Waffles: Quick and Nutritious Breakfast in 30 Minutes

If you are looking for an unusual breakfast option, try zucchini waffles. This dish is perfect for a morning meal and will be an interesting alternative to regular omelets or toast.

Ingredients:

  • Zucchini – 400 g
  • Flour – 120 g
  • Vegetable oil – 3–4 tbsp
  • Eggs – 2 pcs
  • Sour cream – 2 tbsp
  • Cheese (mozzarella or other) – 120 g
  • Pepper – to taste
  • Salt – 1/3 tsp

Preparation:

  1. Wash the zucchini, dry them, and grate on a coarse grater. Squeeze out the excess liquid.
  2. Grate the cheese on a fine grater and add it to the zucchini. Mix, beat in the eggs, add sour cream, salt, and pepper.
  3. Sift the flour and combine it with the zucchini mixture. Mix thoroughly until a homogeneous batter forms.
  4. Preheat the waffle maker and grease with vegetable oil if necessary. Place 2 tbsp of batter into the mold.
  5. Bake for 3–4 minutes until golden brown. Optionally, serve with sour cream or additional cheese.
