Many housewives are convinced that dried fruits should be soaked in hot water or even scalded with boiling water before cooking. In fact, this is a misconception — and we will explain why.

To ensure that dried fruits can be stored for a long time without developing mold, manufacturers treat them with a special substance — sulfur dioxide. This protective layer prevents even imperfectly dried fruits from spoiling.

However, there is an important detail: this layer only dissolves in cold water. Hot water has almost no effect on it.

Therefore, the correct preparation is simple: pour the dried fruits into a bowl, cover them with cold water, and let them sit for about 15 minutes. After soaking, the dried fruits should be gently stirred, the water drained, and then rinsed thoroughly under cold running water.
