Vegetable Casserole: A Light and Healthy Diet Dish

Vegetable casseroles can be made in various ways. The simplest is to slice available vegetables very thinly using a fancy grater. Layer them in a dish and pour liquid over them. If using milk, sour cream, or cream, it is delicious but not healthy. However, with tomato sauce, garlic, and herbs, it is both tasty and healthy. Mushrooms can also be added for variety. Or nuts. A light and very healthy vegetable dish. It will especially appeal to ladies who are watching their figure.

Ingredients:

  • Cauliflower - 500 g

  • Green beans or green peas - 100 g

  • Carrots - 2 pcs

  • Eggs - 4 pcs

  • Ground nutmeg - a pinch

  • Salt, pepper - to taste

  • Flour - 3-4 tbsp

  • Hard cheese - 150 g

  • Breadcrumbs - for sprinkling

Preparation:

  • Peel the carrots and blanch them in salted water for 4 minutes. Add the cauliflower, broken into florets, and cook for another 4 minutes.

  • Drain the blanched vegetables in a colander, then chop finely along with the beans (or add peas).

  • Separate the egg whites from the yolks and beat with a pinch of salt until stiff peaks form. In another bowl, beat the yolks, season with salt and pepper, and add nutmeg. Pour the yolk mixture over the vegetables and add flour.

  • Add 2/3 of the grated cheese and mix well.

  • Now gently fold in the beaten egg whites.

  • Preheat the oven to 180 degrees. Place the prepared mixture into a greased baking dish sprinkled with breadcrumbs.

  • Sprinkle with the remaining grated cheese and bake for 40-45 minutes. It can be served hot or cold with sour cream or your favorite sauce.
