Ingredients
- eggplants — 2 pcs.
- minced meat (pork or mixed) — 400 g
- hard cheese — 100 g
- tomatoes — 2 pcs.
- garlic — 2 cloves
- parsley — to taste
- black ground pepper — to taste
- salt — to taste
- vegetable oil — a little for greasing
Preparation

Prepare the eggplants. Wash, dry, and cut them lengthwise. Carefully scoop out some of the flesh to create "boats." Finely chop the flesh.

Make the filling. In a bowl, combine the chopped flesh, minced meat, diced tomatoes, chopped parsley, and pressed garlic. Season with salt and pepper and mix well.

Shape and bake. Lightly salt the boats and brush with vegetable oil. Fill with the meat mixture and place in a baking dish lined with parchment paper. Bake at 180°C for about 40 minutes.

Add cheese. Sprinkle with grated cheese and bake for another 5–7 minutes until melted and golden brown.
Tip
For variety, you can use chicken mince, add some bell pepper or oregano — it will be even more aromatic.
