Exquisite Dinner: Preparing Strudel with Salmon and Spinach

Such strudel is excellent as a main dish - complement it with sour cream sauce and salad - and voilà! An exquisite lunch or dinner is ready!

Ingredients for 4 servings:

Dough

  • Wheat flour 130 grams

  • Additional flour for kneading the dough

  • Egg (whisk the whole egg and separate half)

  • 1/2 pcs. vegetable oil

  • 1 tbsp. cold water 60 ml.

Filling

  • Salmon or other red fish

  • 600 g spinach (frozen is fine, thaw and squeeze out)

  • 150 g semi-hard cheese

  • 1 egg

  • Breadcrumbs 2 tbsp.

  • Butter 20 g

Recipe:

Making the dough

  • For this, sift the flour into a bowl, making a well in the center. Pour in half of the egg, oil, and water, and knead the dough.

  • Transfer it to a floured surface and start kneading, gradually adding more flour. The dough should be soft and not stick to your hands. This will take about 10 minutes.

  • Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

While the dough is resting, prepare the filling.

  • For this, grate the cheese on a coarse grater.

  • Slice the fish.

  • If you are using fresh spinach, it needs to be sautéed. To do this, melt 25 g of butter in a pan over medium heat, add the spinach, and cook, stirring, until soft.

  • Remove from heat. Mix the cheese, fish, spinach, and egg. Add salt to taste.

  • Next, you need to stretch the dough. Place a linen towel on the table and sprinkle it with flour. Place the dough in the center and start rolling it out with a rolling pin to the size of the towel (approximately 50*70).

  • Once it becomes impossible to roll it out any further, set the rolling pin aside and start stretching the dough by hand. If the dough is kneaded correctly, it will stretch very well. So don’t be afraid, but still avoid making overly sharp movements. Well-stretched dough should be very thin.

  • Position the rectangle of dough with the long side facing you. Sprinkle the dough with breadcrumbs, leaving a couple of centimeters clean at the top and bottom and about 15 cm on the right.

  • Place the filling on top of the breadcrumbs.

  • Lift the edge of the towel and roll the strudel towards the side of the dough that you left free. The strudel will roll itself up. Pinch the edges of the strudel.

  • Place it on a baking sheet lined with parchment paper, brushing it with melted butter.

  • Send it to a preheated oven at 200 degrees for 35 minutes.

  • Remove the finished strudel from the oven, let it sit for 10 minutes, then cut it into serving pieces and serve, sprinkled with ground sweet paprika (optional), with sour cream sauce and a tomato salad.
