After pickles from the jar make it to the table, the brine often ends up being poured out. However, this salty product can be reused, giving familiar dishes a new and vibrant flavor.
One way to reuse brine is to make batter for fish or chicken.
For this, you need to pour a cup of cucumber brine into a bowl with the same amount of flour.
Add 2 eggs and a pinch of baking soda to the resulting mixture. Then whisk the mixture thoroughly to avoid lumps.
Add 1 tablespoon of vegetable oil, and your wonderful batter is ready.
Fish or meat prepared this way will not have a sour taste — only a slight spicy aroma will remain from the brine.
If you use corn flour instead of wheat flour, the batter will be even fluffier and will acquire a pleasant bright yellow hue.
