If the rice does not turn out fluffy during cooking, the pilaf may resemble porridge.

 

It is important to know what mistakes can lead to unsuccessful preparation of this dish.

Most often, the problem lies in four main shortcomings.
What are they?

Excess Starch

If there is a lot of starch left in the rice, it will stick together. Therefore, it is always advisable to soak the grains. It is best to use warm water with a small amount of salt. This process should take about half an hour.

Roasting

Some cooks are afraid to leave the rice without water in the pot, so they add liquid right away. However, the rice should be sautéed for 1-2 minutes.

Water Temperature

When cooking, water or broth is poured into the rice depending on the recipe. To make the pilaf beautiful and tasty, use hot liquid instead of cold.

Amount of Water

We are used to classic ratios: for one part of rice, take twice as much water. But this rule is only true for parboiled rice.

Depending on the variety of the grain, there may be different proportions. For example, basmati and jasmine require 1.5 times more water.
