What are the benefits of eggplant caviar?

Stress, lack of sleep, and a sedentary lifestyle can negatively affect health. Let's consider how eggplants and eggplant caviar contribute to improving the functioning of the heart and gastrointestinal tract.

Eggplants are rich in fiber, which helps improve digestive processes and regulate blood sugar levels. Anthocyanin, which gives the vegetable its purple hue, reduces the risk of atherosclerosis, hypertension, and heart attack, as well as contributes to the elasticity of blood vessel walls.

The beneficial properties of eggplants are preserved in properly prepared eggplant caviar. This dish also contains a lot of vitamin B, which is necessary for the functioning of the brain, nervous system, cardiovascular system, and blood circulation. Iron and copper present in the vegetables help increase hemoglobin levels, improving the oxygen supply to organs and tissues.

However, eggplant caviar also has contraindications: it should not be consumed in cases of gastritis, kidney stones, arthritis, ulcers, cholecystitis, and colitis.

If you decide to purchase ready-made caviar, pay attention to several important aspects. The product should have a uniform, slightly grainy texture without large pieces of skin and seeds.

The caviar should contain only eggplants, carrots, onions, tomato paste, salt, spices, sugar, and vegetable oil. A quality and healthy product does not contain preservatives, colorings, starch, or flour.

Pay attention to the lid—it should tightly seal the neck of the jar. Eggplant caviar is not classified by grades, so labels such as “premium grade” or “made according to industry standards” may indicate that the manufacturer has altered the traditional recipe. If the caviar has a bitter taste, this may indicate the use of rancid vegetable oil.
