Olivier Transformer: Dietitian Tips for Improving Favorite Dishes

New Year's feast is a unique event that does not require strict restrictions for a healthy person. However, moderation will not be superfluous. Even the most caloric dishes can be made healthier.

Take advantage of the recommendations from dietitian Natalia Denisova.

Almost any familiar dish can be adapted by reducing its salt, sugar, and unhealthy fat content.

Salads. For example, Olivier salad will become healthier if you reduce the amount of boiled potatoes, replace sausage with beef or chicken, and use fresh cucumbers instead of pickles. You can dress the salad not with mayonnaise, but with low-fat yogurt mixed with lemon juice. Similarly, in herring under a fur coat, you can reduce the amount of potatoes and mayonnaise.

Sandwiches. Instead of white bread, it is better to choose whole grain or rye. You can also replace the bread with a slice of fresh cucumber or a lettuce leaf, on which you can place a piece of sausage, cheese, or fish.

Hot meat dishes. Fatty pork is recommended to be replaced with dishes made from fish, turkey, chicken, or rabbit. When baking, it is better not to use cheese and mayonnaise, which will reduce the amount of fat and salt; instead, use spices for a richer flavor. You can also skip the hot dish at the late New Year's dinner and stick to cold appetizers and a light dessert, leaving the hot dish for the next day.

Side dishes. The traditional side dish of potatoes or rice is better replaced with cabbage, zucchini, eggplant, and other vegetables. They fill the stomach well and prevent overeating of high-calorie foods. Additionally, the combination of meat with vegetables promotes better iron absorption. The dietary fibers found in vegetables and greens help eliminate excess fats and harmful substances from the body.

Beverages. It is advisable to prefer unsweetened drinks at room temperature: still mineral water, berry morsels, compotes, or rosehip broth, among others. Cold and carbonated drinks slow down digestion and exacerbate symptoms of overeating.

Desserts. To make a dessert less caloric, you can choose jelly with fruits or fruit salad. Ice cream can be a good option, but it is better to choose real cream ice cream in small amounts rather than fruit ice, which contains a lot of sugar.
