Fried potatoes can be both an accessible and simple option for dinner and an original side dish for a festive table. Renowned chef and television presenter James Martin shared the secrets of making perfect fried potatoes.

 

According to James Martin, despite the widespread popularity of potatoes and their ubiquitous use in cooking, few manage to prepare truly delicious side dishes. The method shared by the chef allows for the perfect balance between overcooked and overly soft potatoes.

“The holidays are just around the corner, now is the perfect time to hone your skills in preparing dishes for gatherings. Fried potatoes should be crispy on the outside and moderately soft on the inside,” says the famous James Martin.

This recipe was presented in one of the episodes of the BBC weekend cooking show “Saturday Kitchen.” The chef recommends preheating the oven to 200 degrees. While it heats up, peel 10 large potatoes, cut them into pieces, and immerse them in boiling water for 4-5 minutes. Then drain the water and shake the potatoes a little.

“In a deep ovenproof dish, melt 50 grams of lard or vegetable oil for frying, add the potatoes, season with salt, and cook until the potatoes start to turn golden. This will take about 30 minutes. Then flip the potato pieces and fry for another 20-30 minutes until they are perfectly golden brown again. Done!,” advises the chef.

James Martin also suggests experimenting with flavor nuances. He notes that you can add a few cloves of garlic, sprigs of thyme, or rosemary to the oil.
