Why Garlic Smells Delicious in Dishes but Awful from a Person: Explained by a Toxicologist

Dishes with garlic become more aromatic and appetizing. However, garlic breath from the hands or mouth can be quite overwhelming. Why?

The reason for such different perceptions of the same smell was explained by toxicologist Mikhail Kutushov.

Why Garlic Smells So Strongly

According to the expert, in a prepared dish, the smell of garlic mixes with the aromas of other ingredients and softens, becoming more pleasant.

As soon as it is eaten in its pure form, a different process begins. Sulfur-containing compounds instantly enter the breath and sweat. The body perceives the pungent notes as an irritating signal.

Health Benefits of Garlic

When garlic is crushed, allicin is activated — an active compound with antiviral and antibacterial properties. Thanks to it, garlic:

  • strengthens the immune system and heart and vascular health;
  • helps normalize blood pressure and reduce cholesterol levels;
  • acts as an antioxidant, preventing cell damage;
  • lowers the risk of thrombosis;
  • has a potential anti-cancer effect.

How Much Garlic Can Be Eaten in a Day

Kutushov noted that a healthy person can eat 1 bulb of garlic per day, dividing it into several meals. This way, the body will absorb the beneficial substances, and the digestive system will not be harmed. However, it is important to remember that allicin does not withstand high temperatures, so it provides maximum benefits only when fresh.
