Ingredients:

150 g cottage cheese 1 egg 3 tbsp oat flour ½ tsp baking powder a pinch of salt

Preparation:

Mix all the ingredients until smooth. Bake in a waffle maker for 3–4 minutes until golden brown. Serve with berries, honey, or avocado.

Cottage Cheese Pizza Base

Ingredients:

200 g cottage cheese 1 egg 3–4 tbsp rice flour (or whole grain) a pinch of salt

Preparation:

Mix the ingredients, form the base, and bake for 10–12 minutes at 180°C. Top with whatever you love: vegetables, herbs, cheese, salami, etc.

Cottage Cheese Sauce for Vegetables

Ingredients:

150 g cottage cheese juice of ½ lemon 1 tbsp olive oil a handful of herbs (dill, parsley, or basil) a pinch of salt and pepper

Preparation:

Blend the cottage cheese with the herbs and dressings. Use as a dip for vegetables or a spread for crispbreads.
