How to Make the Perfect Trout Salad: Simple and Delicious

Light fish salads have long become a symbol of healthy eating — and for good reason. They are filling but not heavy, providing the body with protein, healthy fats, and vitamins. This trout version is just like that: fresh, aromatic, and quite 'restaurant-like' in taste.

Ingredients

For the salad:

  • trout fillet — 2 pcs.
  • radishes — 4 pcs.
  • tomatoes — 3 pcs.
  • green onions — 2 stalks
  • capers — 2 tbsp.
  • arugula — 1 handful
  • basil — 4 sprigs
  • leaf lettuce — 1 head

For the dressing:

  • orange juice — 150 ml
  • garlic — 1 clove
  • dill — ½ tbsp.
  • lemon — ½ pc.
  • olive oil — 8 tbsp.
  • balsamic vinegar — ½ tbsp.
  • salt, pepper — to taste

How to prepare

First, deal with the fish. Make shallow cuts in the fillet, lightly salt it, and drizzle with olive oil. Leave it for just a few minutes — this is enough for the flavor to become more intense.

It is better to steam the trout. This takes about 20–25 minutes: the fish becomes especially tender, juicy, and retains maximum beneficial properties. You can easily check for readiness — the fillet should separate into pieces without effort.

While the fish is cooking, make the dressing. In a blender, combine the orange juice, garlic, dill, lemon juice, olive oil, balsamic vinegar, salt, and pepper. Blend until smooth — the sauce should be fresh, slightly tangy, and very aromatic.

Now assemble the salad. Slice the radishes, tomatoes, and green onions. In a large bowl, mix them with the arugula, basil, and lettuce leaves. Drizzle with the dressing and gently toss to keep the greens airy.

Finally, add the trout — without skin and bones. Mix carefully so that the pieces do not fall apart.

How to serve

This salad is best not to leave for later — it is good right after preparation when the greens are crispy and the fish is still warm and juicy.

It pairs perfectly with a glass of white wine or just water with lemon for a light dinner or lunch.
