If you are tired of the usual syrniki, you can prepare a heartier breakfast option. These cottage cheese patties taste reminiscent of homemade pies with eggs and green onions, but are much easier to make. There is no need to knead yeast dough and make a filling — all the ingredients are mixed together in one bowl.
Ingredients
- Cottage cheese — 200 g
- Boiled eggs — 2 pcs.
- Raw egg — 1 pc.
- Green onions — a small bunch
- Flour — about 4 tbsp (depending on the moisture of the cottage cheese)
- Salt — 1/3 tsp
- Vegetable oil — for frying
Preparing the Dough
Place the cottage cheese in a deep bowl and mash it thoroughly with a fork. You can choose the fat content of the product to your taste.
Grate the boiled eggs on a coarse grater and add them to the cottage cheese. Then crack the raw egg, which will help bind all the ingredients together.
Finely chop the green onions and add them to the mixture. If desired, you can replace the onions with dill or other favorite spices.
Forming the Patties
Salt the mixture and gradually add the flour. The amount of flour may vary slightly — it all depends on the moisture of the cottage cheese. In the end, you should have a thick, slightly sticky dough.
Moisten your hands with water or vegetable oil to prevent the mixture from sticking, and form small round patties.
Cooking
Heat a skillet over low heat and add a little vegetable oil.
Place the patties in the skillet, cover with a lid, and cook for about 10 minutes.
When the bottom side is nicely browned and the top becomes matte, flip the patties. Cover with a lid again and cook for another 3–4 minutes.
How to Serve
The finished patties are best served hot. They pair excellently with sour cream or natural yogurt.
