Water Will Only Make It Worse: 5 Grains You Shouldn't Wash Before Cooking

Some grains are indeed commonly rinsed before cooking to remove dust and traces of processing. However, there are products for which contact with water is detrimental.

One of these grains is couscous, which is made from durum wheat. The crushed grain quickly absorbs moisture, clumps together, and turns into a sticky mass that is difficult to cook. Additionally, couscous is already treated with water and flour during production, so it is sufficient to simply pour boiling water over it for preparation. For the same reason, bulgur, made from pre-cooked and dried wheat, should not be rinsed, as water can wash away some of its beneficial nutrients.

Semolina should also not be washed. Pre-soaking disrupts its structure and worsens the quality of porridge and casseroles. The same rule applies to oatmeal, which becomes watery and loses its texture after rinsing. Basmati rice with long grains and a pronounced aroma is also included in this list. Contact with water before cooking robs it of its characteristic flavor and texture.
