Kebab refers to any meat that is cooked or literally 'rotated' on a grill. This can be either pieces of meat or minced meat. Cooking kebab is quick and simple, requiring only meat and spices to taste. Although you can get by with just salt and black pepper. And believe me, even children will appreciate such a dish, especially if you add a delicious homemade sauce.
Secrets of Cooking Kebab
Take any piece of meat, turn it into minced meat, add chopped or ground onion, salt, pepper, and spices to taste. Use tarragon, khmeli-suneli, chili pepper, dill, paprika, basil, cilantro, cumin, and coriander. If you are cooking kebab on a grill, use flat skewers and never beat the minced meat, just mix it well. This is necessary for the kebab to hold its shape well and not break during cooking.
We will make kebab from beef, adding spices that are usually always at home – dill and khmeli-suneli. To enhance and diversify the flavor, you can also use cheese as a filling. It will be a delicious and nutritious dish that can be served with any porridge, boiled potatoes, spaghetti, or simply enjoyed with sauce. And if you wrap the kebab in lavash and add some sliced vegetables, it will turn into a real dish from an Eastern restaurant.
Ingredients
For 12 servings of minced meat:

1 kg of beef

2 eggs

1 tsp of khmeli-suneli

1 medium onion

1 tsp of dried dill (can be replaced with fresh)

sunflower oil for greasing the baking sheet and finished kebabs
For the filling:
125 g of grated hard cheese
Preparation:

Preheat the oven to 180 degrees.

Prepare the minced meat. Take 1 kg of beef, clean it from membranes and fat. Grind it twice in a meat grinder so that the minced meat becomes tender and sticks together well.

Peel the onion and chop it into small cubes, add it to the minced meat.

Crack 2 eggs into the minced meat, add 1 tsp of khmeli-suneli, 1 tsp of dried dill, and salt to taste. You can use 10 sprigs of fresh dill: wash, tear off, and finely chop.

Mix the minced meat well so that the spices are evenly distributed.

Make the filling. Grate 125 g of cheese on a coarse grater.

Mix the minced meat again and divide it into pieces. We got portions of 80 g each. A total of 12 pieces.

Form the kebab. Take the minced meat, make a ball, then flatten it. You should get a patty. Place a little grated cheese inside, wrap it into the shape of an oval sausage. Make sure the cheese is not visible. During cooking, it may leak out, and we don't want that.

Grease the baking sheet with sunflower oil and place the kebabs on it. You can cook one batch and freeze the other. Bake for 30 minutes at 180 degrees.

Before serving, brush each kebab with sunflower oil and sprinkle with dried dill.
