Savory pie is one of the simplest baking options with filling due to the ease of preparing the dough. One of the most popular recipes is a savory pie with onions and eggs made with kefir and sour cream. The pie turns out soft, airy, with fluffy and golden-brown dough, while the juicy filling of boiled eggs and green onions delights with its delicate taste.
This pie can be served for breakfast, lunch, or dinner alongside a salad, or as a quick snack. It is suitable when guests are already at the door, or if you don't want to deal with yeast dough and fried pastries.
Ingredients
For the dough:
- Chicken eggs – 3 pcs.
- Wheat flour – 250 g
- Kefir – 250 ml
- Sour cream 20% – 150 g
- Baking powder – 15 g
- Salt – ½ tsp.
- Butter – 20 g
For the filling:
- Green onions – 250 g
- Chicken eggs – 4 pcs.
- Sour cream 20% – 1 tbsp.
- Salt – ½ tsp.
For greasing the pie:
- Chicken yolk – 1 pc.
- Sour cream 20% – 1 tbsp.
Preparation
- Boil 4 eggs hard and chop them coarsely. Chop the green onions coarsely.
- In a bowl, combine the eggs, onions, 1 tbsp. of sour cream, and ½ tsp. of salt, and mix well.
- Preheat the oven to 180°C.
- In a deep bowl, whisk or mix 3 eggs, ½ tsp. of salt, 150 g of sour cream, and kefir. Add the sifted flour and baking powder, and mix well until smooth.
- Line the baking dish with parchment paper and grease the bottom and sides with butter.
- Pour half of the batter into the dish and level it. Spread the filling on top, leaving 1 cm from the edge. Pour the remaining batter over and carefully level the surface.
- Mix the yolk and 1 tbsp. of sour cream, and brush the top of the pie.
- Bake for 50–55 minutes at 180°C. Check for readiness with a wooden stick – it should come out dry.
- Serve with sour cream or sour cream sauce.
Tips
- Add the baking powder last, otherwise the dough will not rise well.
- For a richer flavor, use sour cream and kefir with higher fat content.
- Butter for the dish can be replaced with vegetable oil.
- You can add fresh herbs to the green onions: dill, parsley, spinach.
- If the top of the pie browns too much, cover it with foil and continue baking.
- For serving, you can prepare a sauce: finely chopped herbs + low-fat sour cream, seasoned to taste. Sour cream can be replaced with natural or Greek yogurt.
