Tender quiche with salmon and broccoli is the perfect option for homemade baking: hearty, aromatic, and easy to prepare. Just a few steps, and you have French classic on your table, suitable for both dinner and breakfast.
Ingredients
For the dough:
- flour — 250 g
- sugar — 2 tsp
- salt — 0.5 tsp
- cold butter — 150 g
- egg yolk — 1 pc.
- cold water — 2–3 tbsp.
For the filling:
- salmon — 300 g
- broccoli — 250 g
For the custard:
- 20% cream — 350 ml
- eggs — 3 pcs.
- hard cheese — 60 g
- oregano — 1 tsp
- salt and pepper — to taste
Preparation

Prepare the dough. Mix the flour, sugar, and salt. Add the butter, rub into crumbs, pour in the yolk and water. Form into a ball, place in the refrigerator for 40 minutes.

Bake the base. Roll out the dough, place it in the mold, and make the edges. Cover with parchment, fill with beans. Bake at 190°C for 20 minutes.

Prepare the filling. Boil the broccoli for 2–3 minutes, then rinse with cold water. Cut the salmon into cubes.

Assemble the quiche. Remove the beans, place the salmon and broccoli. Mix the cream, eggs, spices, and cheese. Pour the mixture into the mold, bake at 180°C for 40–50 minutes until golden brown.

Serve. Let cool, slice, and serve.
