Do ceramic knives break?

It's not that straightforward.

 

Opinion of Alexey YAKOVLEV, a specialist from a company that manufactures ceramic knives:

- One should not draw parallels between the ceramics used for knives and the ceramics used for tiles. The only thing they have in common is the production method — firing in a kiln.

Zirconium is used to make the blades, which melts at high temperatures and turns into extremely durable zirconium dioxide (its hardness is 8.0-8.6 units, while diamond hardness is 10 units).

The blade practically does not lose its sharpness and is resistant to corrosion. However, to extend the knife's lifespan, several recommendations should be followed: do not wash it in a dishwasher, avoid using glass and porcelain cutting boards, preferring wooden or plastic ones.

When choosing a ceramic knife, try cutting a sheet of paper in the air. If the blade easily handles the task, it means the sharpening is of good quality; if it starts tearing the paper, it is better to refrain from purchasing. By the way, ceramic knives can be both white and black. Dark knives are fired in the kiln longer, making them harder.
