Cooked or frozen strawberries cannot convey the flavor qualities that they possess after ripening.
Thawed berries often look unappealing and have a watery taste. However, there is a way to preserve strawberries for winter without the usual methods.
The taste of such strawberries will resemble fresh berries with sugar.
For preparation you will need:
1 kg of strawberries;
1 kg of sugar;
200 ml of water;
2 g of citric acid.
How to prepare
Pour water into a pot, add sugar, stir and put it on the heat.
When the syrup boils, add citric acid and cook for another 15 minutes.
Meanwhile, prepare the berries: it is better to use small and medium ones. Wash them, remove the stems, and dry them on a napkin.
Then place the berries in a bowl and pour hot sugar syrup over them.
Let the strawberries sit for about 20 minutes to release their juice.
After that, drain the berries in a colander, bring the remaining syrup to a boil and cook for 10 minutes. Then pour the syrup over the berries again and leave for 20 minutes.
Repeat the same procedure for the third time, but boil the syrup for only 5 minutes.
Before the third pouring, distribute the berries into dry sterilized jars and pour sugar syrup over them.
Store the jars upside down for 3 days, and then put them in the pantry.
