The United States is facing a honey shortage, with production unable to keep up with the growing demand fueled by the popularity of "clean eating," Bloomberg reports.
Americans are increasingly turning away from processed sweeteners like high-fructose corn syrup in favor of natural products, including honey.
According to Bloomberg, food service establishments and home cooks are using honey more frequently, despite its high cost.
Co-owner of Magpie Café in Sacramento, California, Jenelle Inoue, stated that she pays 30% more for honey than she did five or six years ago.
"I don’t know what else has hit my wallet as hard as the price jump for honey," she admitted.
According to her, she would rather remove a dish from the menu than substitute honey with another sweetener.
Although honey, like any other sweetener, raises blood sugar levels, it enjoys a "health halo" due to its antioxidant content and natural origin.
