Potato Khachapuri Without Dough — Quick Breakfast in 20 Minutes

If you want a hearty and aromatic breakfast, try khachapuri made from two potatoes. Tender potatoes, juicy filling of green peas, tomato, and mozzarella create a delicious dish that the whole family will appreciate.

Ingredients:

  • Potatoes — 2 pcs.
  • Green onions — 1 bunch
  • Parsley — to taste
  • Frozen peas — 3 tbsp.
  • Tomato — 1 pc.
  • Mozzarella cheese — 150 g
  • Flatbreads — 2 pcs.
  • Parmesan cheese — to taste
  • Salt, black pepper — to taste
  • Oil — for greasing

Preparation:

  1. Preparing the potatoes: peel and boil the potatoes until cooked, then mash them, adding salt. Chop the green onions and parsley, and add them to the mashed potatoes along with the peas.

  2. Filling: dice the tomato, season with salt and pepper. Grate the mozzarella and mix it with the potato mixture.

  3. Assembling: place the filling on the first flatbread, spread it evenly, cover with the second flatbread, and sprinkle with parmesan on top.

  4. Baking: transfer to parchment in a baking dish and bake in the oven at 190 °C until golden brown.

These khachapuri turn out hearty, aromatic, and are made without any hassle — the perfect option for a quick and delicious breakfast.
