For many travelers, experiencing local cuisine is one of the main reasons to go on vacation. Time Out has presented a ranking of the best gastronomic cities in the world for 2026, including destinations where food is not just a part of the culture but a true attraction.
Tasting local dishes is one of the most enjoyable parts of any trip. For many tourists, the cuisine becomes a decisive factor when choosing a country or city for vacation.
Time Out has published a ranking of the best gastronomic cities in the world for 2026. To compile this list, journalists surveyed thousands of residents from different countries, asking them to rate the quality, variety, and accessibility of local cuisine. Additionally, chefs, restaurant critics, and experts from the gastronomic industry participated in the study.
The authors of the ranking note that when compiling the list, not only the popularity of restaurants and the level of service were considered, but also culinary traditions, food culture, product availability, and the uniqueness of local cuisine.
Lima Tops the Global Ranking
The first place in the list was taken by the capital of Peru — Lima.
According to experts, the gastronomy of this city reflects the rich cultural and natural diversity of the country. Here, one can try dishes from almost all regions of Peru — from Amazonian cuisine to traditional recipes from the north and south of the country.
The authors of the ranking paid special attention not only to the famous ceviche but also to the lesser-known dish outside of Peru, causa limeña — a cold appetizer made from potatoes with various fillings.
Moreover, Lima became the most accessible city in the ranking for lovers of gastronomic discoveries. According to the survey, 90% of locals consider restaurants to be inexpensive, and 85% named the city overall as accessible for dining out.
Bangkok and Mexico City in the Top Three
The second place went to Bangkok.
As noted by experts, the modern gastronomic culture of the Thai capital has been shaped by international trade, migration, and Chinese culinary traditions. These have played an important role in the development of the famous street food culture.
"The best dishes in Bangkok often combine sweet, salty, sour, and spicy flavors in one dish," the publication states.
Mexico City took the third place.
The gastronomic scene of the Mexican capital combines traditional national products and culinary influences from around the world. One of the symbols of the city remains taco al pastor — marinated pork with chili peppers and spices, served on a corn tortilla.
London and Barcelona Complete the Top Five
London took the fourth place.
According to the authors of the ranking, the cuisine of the British capital reflects the centuries-old history of the country and the influence of numerous waves of migration. Traditional English establishments successfully coexist with restaurants offering Indian, Chinese, Korean, and many other cuisines from around the world.
"No other city in the world loves dining out more than Londoners," experts from Time Out note.
Completing the top five is Barcelona.
The culinary traditions of the Catalan capital have been shaped by Mediterranean culture, Roman heritage, and international trade. Significant contributions were also made by products that appeared in Europe after the discovery of America, particularly tomatoes and potatoes.
Experts also remind us that Barcelona was one of the first cities in Spain where modern restaurant culture developed.
